What’s Cookin’ at 12 Tribes

Hi everyone!

Carlos Bonilla, here, sending you a message from the inside of the kitchen. This month we’ve had quite exciting adventures throughout our culinary program.

During the first days of the month, we changed five of our dishes in order to continue surprising you with every visit to 12 Tribes Restaurant. We are exploring the flavors of Oaxaca, pairing a traditional “Mole Amarillo” or Yellow Mole with a local fish known as Parrot Fish. Quite eccentric you might say!!! But the result is outright delicious. The subtleness of the fish, the richness of the mole… this will make your taste buds go wild.

We are also exploring a traditional central Mexican “street” dish, known as “Ezquite”. Stewed corn, paired with epazote (for reference, I like to call it Mexican basil) and topped with a nice helping of sautéed calamari (from our Baja coast line, naturally). Add a little Spanish influence, with our house-made bread rolls, and your dining experience at 12 Tribes will be on the way!

And speaking of excellent food, let’s not forget this month is one dedicated to our mothers. Let’s make sure to thank them for all they’ve done for us and all the wonderful meals they’ve spoiled us with. I surely am in debt with my mom for if it weren’t for her, who would have taught me all the real secrets of cuisine!

Last-Minute Ideas to Say “Thank You, Mom”

Hello Everyone,
Can you believe it’s May already? And in Cabo San Lucas that means nearly the beginning of summer. Days are long again and temperatures begin to climb.
In fact, May is one of the most pleasant months to be here. But what makes May extra special is that this is when we celebrate mothers.
Mother’s Day is all about honoring our moms as well as celebrating motherhood, maternal bonds and the influence of mothers in society. It is celebrated on various days in many parts of the world and most commonly in April or May.
Here in Mexico, we celebrate Mother’s Day on May 10th. And our culture revolving very much around a mother figure, the festivity is not taken lightly.
At Casa Dorada, we also understand and appreciate the importance of our moms. That’s why every year we spoil them in every way we can. This year, moms get a special treatment at our Cabo beachfront resort with Saltwater Spa massages, sunset dinners on the beach, champagne breakfasts and much more.

Dream Wedding Preview at Casa Dorada Los Cabos

Some of you may have been fortunate to attend a destination wedding at our Cabo beachfront resort; others may have even celebrated your own wedding with us. And even if you haven’t done either, you must have at least heard of our glamorous beach nuptials.
Earlier this week a group of 15 professional wedding coordinators from across the United States had the opportunity to experience just what a Casa Dorada wedding is like.
They were invited to participate in a simulated wedding, where every detail was meticulously organized—from wedding dress and make up, through ceremony, reception and music, all the way to the set up of the Bridal Suite.
Our visiting coordinators enjoyed a beautiful ceremony conducted by a minister on the terrace of 12 Tribes Restaurant, with a spectacular view over Medano Beach and Land’s End.
A splendid reception followed at the 12 Tribes Restaurant, where our guests were received by Los Cabos’ own Mariachi Band: Mariachi Internacional de Los Cabos. Our Executive Chef, Carlos Bonilla, was in charge of the wedding banquet that would have satisfied even the most discerning palates.
The Bridal Suite was yet another element of this glamorous celebration and it didn’t fall short. A romantic ambiance was complemented with rose petals, wine and chocolate covered strawberries–just a perfect setting for a dream wedding night.

Blue Hawaiian Cocktail

Even though it’s only Monday today, here’s a great cocktail recipe for you to enjoy the last weekend of this month, before the heat kicks in around Cabo San Lucas. Or why wait till the weekend? Blue Hawaiian Cocktail is perfect to be enjoyed in the pool surrounded by clear blue skies and the ocean. In other words, it’s all about blue and in Cabo we’ve got plenty of it, every day of the week!

As always, the second best is preparing it at home if you can’t make it to our Cabo beach resort this weekend.

For each serving you’ll need:

1 oz. Havana White Rum
1 oz. Malibu Rum
0.5 oz. Blue Curaçao
0.5 oz. coconut cream
4 oz. pineapple juice

To prepare, mix all ingredients with ice in a Boston tin and shake well. Serve in a hurricane glass and garnish with a triangle of fresh pineapple.

Great Spring Break 2012 Memories

That’s really too bad that all the good things must come to an end. And that’s also the case with Spring Break  This year we had sooooo much fun here at our Cabo beachfront resort that when it came time to end the party, we were all really sad. So sad in fact, that I just recovered to be able to tell you about it
During the whole month of March the pools, the Okianus Pool Bar, The B Lounge, our Beach Club were all buzzing with activity. Cerveza was flowing, music was playing, bikinis were going wild—just what you’d expect of a perfect Spring Break.
It’s no secret that Cabo San Lucas, Mexico has become the hot spot for those who want to celebrate Spring Break in style, and Casa Dorada is THE place to be for high-end fun. It’s also a great bonus that our resort is right in the heart of Medano Beach –where all Cabo San Lucas action happens. Hot beach bars, chic lounges, all-day pool parties: it’s all here on Medano Beach.
So, even though this year’s party is behind us, make sure you are here next year! You don’t want to miss it and our suites sell out fast!

Relaxation Inside Out with Nausicaa Bed

With Easter around the corner and hopefully some extra time off to kick back and relax, you may be looking for the best way to give your body the attention it deserves.

The Ultimate Thrill of Whale Watching in Los Cabos

Hello Everybody,
March is such an exciting month in Los Cabos with plenty of events and happenings around town. But in addition to parties and a busy cultural agenda, there’s the biggest thrill of all: WHALE WATCHING.
Even though the whale season has been on since November, now seems to be the best time to observe gray whales in our area.
During the fall gray whales make the 6000-mile long journey from their summer homes in the depths of the seas between Alaska and Siberia. In winter, they arrive in the warm waters of Baja California and Sea of Cortez to give birth.
Gray whales calve in the protected, shallow lagoons of San Ignacio, Ojo de Liebre and Magdalena Bay. The city of San Ignacio is located approximately nine hours from Casa Dorada and Magdalena Bay just 5 hours away.
The lagoons frequented by the grays are mid-way to three-quarters of the way down the Baja Peninsula and offer optimal conditions for female grays to give birth. Mother grays are extremely affectionate, playing constantly and bracing the calf on her back when it needs to rest.
In the sheltered lagoons, the calves learn survival skills and build their muscles by swimming against the ocean currents flowing into the calmer waters. Even though the lagoons are hundreds of miles up the peninsula, whale watching around Los Cabos is very abundant as well.
Many male grays travel close to the shore off Los Cabos, and once the calves are mature enough to leave the sanctuary of the lagoon, females are also often spotted in the area.
Watching these incredible creatures play is an awe-inspiring pleasure. Spouting, the breathing out of air by the whale, is usually the first indication of whale activity; however, you may see breaching, too. Breaching, when the whale leaps almost completely out of the water and falls back with a large splash, is a spectacular sight.

Cabo and Its Many Happy Returns

This week we’ve really enjoyed having some old friends back at our Cabo beachfront resort.

It is already a fact that a majority of our guests keep on coming back and it’s exciting to welcome them year after year.

For some it doesn’t even take that long 

Our good friends Esteban and his wife come to Cabo as often as twice a year! It seems like one of the things that makes then come back is their favorite Paloma. Paloma is a refreshing drink made with tequila and grapefruit soda and it’s just perfect for a hot Cabo day by the pool.

Also returning to Cabo last week were Jeff and Suzzy. It was Jeff’s birthday and what better way to celebrate than on a sunny beautiful beach in Mexico!? As we say: Feliz Cumpleaños, Jeff!
Oh, and do send our best to your friend John and his wife who had also vacationed with us before.

It was awesome seeing all of you again and we are looking forward to having your back in no time.
